4 Yukon Gold Potatoes (scrub clean/thinly sliced-1/4 inch thick)
1 Medium Onion (Diced)
1 Thick Sliced Pre-Cooked Ham
8 Eggs
1/4 cup Milk
1 TBSP Sour Cream
1 Tsp Onion Powder
1 Tsp Garlic Powder
1 bag shredded cheddar cheese
2 TBSP Butter
Salt and Pepper to taste
-Cut potatoes in 1/4 inch slices
-Place them into a steamer for 10 minutes
-In large cast iron skillet, place 2 tbsp of butter and add diced onion and sauté for 5 minutes on medium heat.
-Add diced ham to onions and then add spices and stir/cook for 1 minute
-Add steamed potatoes and toss a little with the onions and ham to get the spices to get a bit onto the potatoes
-In a bowl, beat the eggs.  Add milk, sour cream, and half of the bag of cheese and mix well.
-Pour mixture into skillet with onions, ham, and potatoes.  Use a spoon to make sure that the egg penetrates the onions, ham, and potatoes a bit
-Preheat oven oven to 400 degrees Fahrenheit
-Cook on low-medium heat for 15 minutes
-Sprinkle the rest of the bag of cheese on top of the skillet
-Move to oven and cook for 10 minutes more or until lightly brown on top
-Remove from oven and let stand for 5-7 minutes then serve
**This meal can be cooked and then put into portions and frozen for quick meals or lunches for the next 2 weeks.
**Meal also feeds a lot of people, so it is great for crowds
